This creation came about unexpectedly, driven by the desire of cheesemakers in Apulia to avoid waste by filling the mozzarella layer with a mixture of harder mozzarella and cream.
This cheese is highly sought after because of its distinctive shape and texture. In the past, it was very difficult to find. Although burrata cheese was initially only available in Apulia, Southern Italy, it has become more widely produced over time. Nowadays, you can even find burrata cheese at Camilla La Mozzarella.
